Solis Autumn Lentil Soup

Solis™ Autumn Lentil Soup

Comforting, hearty and rich with antioxidants

1 teaspoon coconut oil
1 onion, diced
1 carrot, sliced
4 cups vegetable broth
1 cup dry lentils
1/4 teaspoon pepper
1/4 teaspoon dried thyme
3 tablespoons Solis™ Super Immune Charge
2 bay leaves
salt to desired taste
2 tablespoons vegetable oil
1 tablespoon lemon juice (optional)

Preparation:
In a large pot, sauté the onion and carrot in vegetable oil on medium-high heat for 3-5 minutes until onions are clear and tender. Add the vegetable broth and bring to a boil adding lentils, pepper, thyme, bay leaves and salt. Reduce heat to a simmer and cover.  Cook until lentils are tender, about 45 minutes. Remove from heat and add Solis Super Immune Charge*. Remove bay leaves and stir in lemon juice before serving. Makes 4 servings of lentil soup.

*In order to protect the live enzymes in Super Immune Charge, do not return to heat.
